Merry Christmas Pomegranate Cosmos

Make the base for these pomegranate cosmopolitans ahead of time and shake individual cocktails "to order." Or for individual drinks, combine 3 tablespoons (1 1/2 ounces) each pomegranate juice and vodka, 4 teaspoons lime juice, 1 tablespoon Cointreau, 1 1/2 teaspoons ginger juice and 1/2 teaspoon sugar. -
  • 2 1/4 cups pomegranate juice
  • 2 1/4 cups vodka
  • 1 cup lime juice
    Coupons
  • 3/4 cup Cointreau, or Grand Marnier
  • 1/4 cup ginger juice, (see Note)
  • 2 tablespoons sugar, preferably superfine “bar sugar,” plus more for the rims
  • Strips of lime zest, for garnish
  •
    1
Mix pomegranate juice, vodka, lime juice, Cointreau (or Grand Marnier), ginger juice and sugar in a large pitcher.
    2
For each drink, fill a cocktail shaker halfway with ice, add 1/2 cup Cosmo mix, and shake until the shaker turns frosty and cold. Dip the rim of a martini (or highball) glass into water and then in sugar (to "sugar the rim"). Strain the drink into the martini glass (or over fresh ice in the highball glass). Garnish with a twist of lime zest, if desired.

    Tips:

Note: We use bottled ginger juice (pressed gingerroot) to add the taste of fresh ginger without the work of mincing or grating. Use it to flavor drinks, stir-fries, marinades or anywhere you’d use fresh ginger. Find it in specialty stores or online at gingerpeople.com.

How to Make The Perfect Mojito Recipe

In the summer i love  sitting out on my patio,  curled back with a good book, and a refreshing Mojito...I actually grow my own mint leaves using container gardening, mint grows like crazy.. I have found  lots of uses for mint, including  mint in tea's as well as some fabulous  recipes. At my local Starbucks I found these beautiful white and green ice cubes. These ice cubes make beautiful cocktail drinks...

you'll need:
10 mint leaves
1 lime
2 tablespoons Agave nectar or sugar
2 oz white rum
8 oz club soda

You will also need a muddler, I found the one below at Bath Bed and Beyond for about $7.00.
Muddlers  are kinda hard to find and the price can range from $4-$35. This  one below I have seen as high as $35. So my advice is to shop around. and get one cause this little kitchen aid works well. I also used Agave instead of sugar, I think this makes the drink taste much better.
Start with about 10 mint leaves,  mash them with the muddler just to release the mints juices.

Add 2 slices of thinly  cut lime.

Add about a tablespoon or 2 of light  Agave nectar, or sugar.

Muddle this  a bit more, to juice the lime.

Add 4 more thin slices of lime.
One more tablespoon Agave or sugar.

Using your muddler again, to really juice the limes.

Add a shot of white rum, about 2 oz and pour over ice cubes.
Next fill the glass up with soda water

Garnish with the remaining lime wedge.
ah! now you have the prefect mojito.
Cheers!

Original recipe makes 1 cocktail

  1. Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the A, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.
